Recipe: What to do when your flour gets infested
Egads!
This is one of my favourite recipes. You can use frozen tilapia, but I prefer fresh tilapia fillets.
Ingredients
Preparation
- wash fish with water and then with lemon juice
- coat with salt, turmeric, chilli powder and set aside so that it can marinate for a bit
- chop ingredients in the meantime
- heat oil, saute fish and set aside
- fry onions, add garlic, ginger, a bit more red chilli powder, turmeric, cumin, corriander and stir fry
- add tomatoes and stir fry
- add salt
- add fish
- add green chillies, green pepper (optional) and water
- cover and cook 5-10 minutes
- add lemon juice
- simmer
Serve over brown (or white) rice -I prefer brown rice (Brown Basmati rice is great!)

My sister passed on this recipe to try for our Mother's Day BBQ and it fared quite well.

- dry roast the cumin, fennel and red chillies in a skillet. When cool, grind all three into a powder
- fry the frozen corn in a skillet until excess water is evaporated and the corn is crunchy, set aside
- fry the onions in the oil
- add corn, salt and ground spice
- cook for 2 min
- add red pepper and cilantro
- serve over a bed of mixed greens and garnish with cilantro
Let me tell you, my husband made these for me the other night and they are fantabulous...everyone should taste how heavenly these are!! You'll never go out and buy another chocolate cupcake again! I promise. They're light, but not light in that 'omg this is so healthy I can taste the flour before it was ground' light, it's still sweet enough and chocolately enough that you feel like you can have 10. And you just might.

3/4 cup granulated sugar
5 tablespoons butter or stick margarine, softened
1 teaspoon vanilla extract
2 large eggs
1 cup all-purpose flour
1/4 cup unsweetened cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup fat-free milk
Frosting:
1 tablespoon butter or stick margarine
1/4 cup granulated sugar
3 tablespoons fat-free milk
1 ounce unsweetened chocolate, chopped
1 3/4 cups powdered sugar
1 teaspoon vanilla extract
